Colombian Coffee: Regions, Varieties, and the Rise of Castillo

A Country Built for Coffee

Colombian coffee is grown across roughly 20 of the country's 32 departments, made possible by geography that few other origins can match. The Andes split into three parallel mountain ranges as they cross the country, creating an enormous stretch of microclimates within a relatively compact area. Coffee grows at altitudes from 800 to 2,200 metres, with most production sitting between 1,200 and 1,800 metres.

That geography is farmed at a scale most drinkers do not picture when they hear "Colombian coffee." The Federación Nacional de Cafeteros (FNC), founded in 1927, represents more than 500,000 growers, the overwhelming majority of them small family farms averaging around 1.5 hectares. There is no large-estate model here comparable to Brazil's fazendas. Colombia's reputation was built, and is still maintained, by hundreds of thousands of smallholders selling into a single coordinated system, which is part of why the country markets itself as one unified origin rather than by individual estates.

The scale adds up. Colombia produces well over 13 million 60-kilogram bags a year, making it the world's third-largest coffee producer after Brazil and Vietnam, and the largest producer of washed Arabica of any country.

That scale is also legally protected. In 2007, Café de Colombia became the first agricultural product from outside the European Union to receive Protected Geographical Indication status, the same category that covers products like Parmigiano Reggiano or Champagne. The designation ties the name "Café de Colombia" to coffee grown, harvested, and processed within the country's recognised growing regions, and it was a direct response to counterfeit "Colombian" coffee being sold abroad that had never touched Colombian soil.

The Coffee Growing Axis: Where the Reputation Was Built

For decades, the coffee most people associated with Colombia came from the Eje Cafetero, the Coffee Growing Axis centred on Caldas, Quindío, and Risaralda, with growing areas extending into northwestern Tolima, parts of Valle del Cauca, and southwestern Antioquia. In 2011, UNESCO listed the region as a World Heritage Site, the Coffee Cultural Landscape of Colombia, recognising a century of smallholder cultivation adapted to steep, difficult mountain terrain around the cities of Manizales, Pereira, and Armenia.

This is the Colombia of the Juan Valdez image: family farms on impossibly steep slopes, shade trees, hand-picked cherries. It is also still a serious production centre in its own right. Antioquia contributes around 16% of national output and Tolima around 13%, figures that keep both departments among the country's top producers even as the newer Southern Zone attracts most of the specialty attention.

Huila, Nariño, and Cauca: The Southern Zone's Rising Profile

Over the past two decades, the departments of Huila, Nariño, and Cauca have become the names specialty buyers look for first. Together they produce roughly a third of Colombia's coffee, more than double the combined output of the Eje Cafetero's three core departments.

Huila is the country's single largest coffee-producing department, contributing close to a fifth of national output. Its growing areas span 1,000 to 2,200 metres, and its farmers have won a disproportionate share of Colombia's national cup-quality competitions. Pitalito, one of Huila's largest coffee-producing municipalities, is regularly cited as the single largest coffee-producing town in the country and has repeatedly placed coffees in Colombia's national Cup of Excellence.

Nariño sits further south, closer to the equator, and holds some of Colombia's highest coffee-growing elevations, frequently above 2,000 metres. Counterintuitively, that proximity to the equator does not mean hotter growing conditions. The high altitude combined with cooler average temperatures slows cherry maturation, concentrating sugars in the fruit as it ripens. The resulting cups tend toward pronounced acidity, delicate floral aromatics, and tropical fruit notes.

Cauca, contributing around 11% of national production, tends toward a different profile: confection-like sweetness, caramel and sugar cane, and a fuller, creamier body than the brighter cups typical of Nariño.

From Caturra to Castillo: Breeding Around Leaf Rust

Colombia's varietal story is inseparable from its fight against coffee leaf rust, known locally as roya.

Caturra, a natural dwarf mutation of Bourbon discovered in Brazil's Minas Gerais state between 1915 and 1918 and formally selected by the Instituto Agronômico in São Paulo from 1937, spread widely through Central America and Colombia alike. Its compact growth allowed denser planting, and for much of the 20th century Caturra made up close to half of Colombia's coffee crop.

Caturra's weakness was its high susceptibility to leaf rust, a fungal disease that can devastate a plantation. The tool that eventually solved this had nothing to do with Colombia originally. On the island of Timor in the 1920s, a naturally occurring cross between Arabica and Robusta appeared on its own, later named the Timor Hybrid. It was the only known Arabica-Robusta cross with genuine resistance to leaf rust, and by the 1950s it had become locally valued for exactly that trait. In 1968, Cenicafé, the FNC's national coffee research centre, began a breeding program crossing Caturra with the Timor Hybrid to fold that resistance into a plant suited to Colombian growing conditions. The first result was the Colombia variety, released in 1982, a year before leaf rust actually reached the country. When the disease arrived in the mid-1980s, Colombia already had a resistant variety in the ground.

Breeding continued for another 23 years and five generations, producing Castillo in 2005, released in six regional variants adapted to different growing zones across the country. A national renovation campaign beginning around 2008 replaced an estimated 3 billion trees with Castillo, and it is now the most widely planted variety in Colombia, accounting for around 45% of the national crop according to Cenicafé.

Castillo has long carried a reputation for lower cup quality than Caturra, but the evidence for that is thinner than the reputation suggests. A 2014 to 2015 sensory trial comparing the two varieties grown on the same farms and processed identically found comparable cup scores, with some Castillo lots reaching above 90 points. The research pointed instead to soil fertility, shade management, and processing practice as the stronger predictors of cup quality, not the variety itself.

Two Harvests a Year: An Unusual Calendar

Most coffee-producing countries have a single annual harvest. Colombia, because of its position near the equator and its resulting bimodal rainfall, has two: a main crop and a smaller fly crop known as the mitaca or traviesa.

The main crop typically accounts for 60 to 70% of a farm's annual volume, with the mitaca making up the rest. Timing depends heavily on region and effectively runs in opposite directions across the country. In Huila and Tolima, the main harvest runs from March to June, with the mitaca following from October to December. In Quindío, Risaralda, Valle del Cauca, and other parts of Tolima, the pattern flips: the main harvest runs September to December, with the mitaca in April and May.

The practical effect is that fresh-crop Colombian coffee is being harvested somewhere in the country for most of the year, a rare advantage among origins where roasters typically work around a single harvest window. It also means that a Colombian coffee's harvest date on a bag of green beans tells you far less on its own than it would for a single-harvest origin: the same month can mean a peak main crop in one department and a small mitaca lot in another.

Why Washed Process Became the Standard, and What's Changing

Colombia's clean, bright, consistently washed profile did not happen by accident. The FNC spent decades standardising processing and enforcing quality norms across hundreds of thousands of small farms, and for much of the 20th century a natural-processed lot could be classified as a defect and diverted into lower-value export channels. Naturals and honeys were actively discouraged. The pulp is removed from the cherry before drying, which is what gives Colombian coffee its characteristically clean acidity and clarity. That standardisation, paired with high-altitude Andean growing, is what built Colombia's identity as a dependable, high-quality washed Arabica origin at a scale no other country matches. It is also the identity the FNC has spent decades reinforcing internationally through its "100% Colombian Coffee" trademark, registered in 1969, which licenses roasters to use the mark only when a product contains exclusively Colombian coffee rather than a blend.

In roughly the last five years, that has started to shift at the margins. Producers, particularly those working in specialty and competition circles, have begun experimenting more freely with honey processing and with natural process lots, alongside co-fermentation techniques that did not exist in Colombian coffee a decade ago. Washed still accounts for the vast majority of what leaves the country, but the range of what Colombian producers are willing to try has widened considerably.
