Mellow Yellow from Los Patios in La Plata, Huila, blends traditional Colombian coffee with sweet peach notes through a unique co-fermentation process. Developed by the R&D team, this coffee undergoes a two-day fermentation with peach concentrate, resulting in a smooth cup with hints of peach sweetness. A perfect example of innovation enhancing Colombian flavor.

Let your coffee rest

The coffee should rest for approx. 10-14 days after roasting and be used after 3 months at the latest. The coffee reaches its maximum variety within a certain period of time. Filter coffee reaches its peak between 2-5 weeks and espresso between 4-6 weeks.

Los Patios

a dedicated processing HQ located in the La Plata region of Huila, Colombia. This facility works with local producers from farms ranging from 1,600 to 1,900 meters above sea level, which are typically around 3 hectares in size. The cherries come from various small-scale coffee farmers in the region, where they are carefully grown and harvested with a focus on quality. Los Patios then processes these cherries to unlock their full potential, contributing to the development of exceptional coffees like Mellow Yellow.

Colombia

The coffee used for Mellow Yellow is the Colombia variety, known for its balanced and traditional profile. Grown at high altitudes in La Plata’s fertile soils, the Colombia variety thrives in this climate, offering a solid base for the coffee’s unique flavors. It is the perfect variety for the innovative co-fermentation process that enhances its inherent characteristics with sweet peach notes.

Co-fermentation

Mellow Yellow is the result of a pioneering co-fermentation process developed by the Research & Development team at Los Patios. After an initial 12-hour aerobic fermentation in cherry by local producers, the de-pulped cherries are transported to Los Patios for further processing. Here, a commercial peach concentrate is combined with a proprietary solution, infusing the coffee beans with peach precursors during a two-day fermentation phase. This process imparts a delightful peach sweetness to the coffee. After fermentation, the coffee is dried for 12-16 days, carefully monitored to ensure even drying and preserve both the cup and bean quality. The result is a distinctive coffee with a subtle yet memorable peach flavor, balanced by the traditional chocolatey profile of Colombian coffee.
