Castillo Coffee: How Colombia Bred a Variety to Beat Leaf Rust

A Variety Built to Survive Leaf Rust

Castillo exists because of a fungus. Coffee leaf rust, known in Colombia as la roya, attacks the underside of coffee leaves, cutting a plant's ability to photosynthesize and, in a bad outbreak, stripping a farm bare within a season. The disease first appeared in Ceylon (now Sri Lanka) in 1869 and went on to destroy that country's entire coffee industry within two decades, forcing growers there to switch to tea instead. By the 1970s, wind-carried rust spores had spread across Latin America, and Colombia's coffee economy could not afford a repeat of what happened in Ceylon.

That economy rests almost entirely on smallholders. More than 500,000 farming families grow Colombian coffee, most working plots of a hectare or two with little room to absorb a season of crop failure. In the mid-20th century, the dominant variety on those farms was Caturra, compact and high-yielding but with no natural resistance to rust at all. In 1968, Cenicafé, the national coffee research centre run by the Federación Nacional de Cafeteros, began a breeding program with one goal: fold durable rust resistance into a plant that could still perform on a Colombian hillside farm.

The resistance already existed in nature, just not in a form anyone could grow commercially. On the island of Timor in the 1920s, a spontaneous cross between Arabica and Robusta had appeared on its own. Robusta carries strong natural resistance to leaf rust, and this accidental hybrid, later named the Timor Hybrid, turned out to be one of the only known Arabica-Robusta crosses with resistance durable enough to matter. By the 1950s, breeding programs across the coffee world were already working with it. Cenicafé's task was harder than simply planting it: cross that resistance into something that tasted, grew, and yielded like a proper Colombian Arabica, not a rough hybrid with a coffee-shaped excuse for a cup.

The Five-Generation Path From Caturra to Castillo

Cenicafé's first cross paired Caturra with the Timor Hybrid, and backcrossed the offspring repeatedly against Caturra to recover its compact growth and cup quality while keeping the Timor Hybrid's resistance genes intact. The first stable, releasable result was the Colombia variety, launched in 1982. The timing turned out to matter enormously: rust reached the country in the mid-1980s, and by then Colombia already had a resistant variety established on farms, rather than scrambling to breed one from scratch mid-epidemic.

But the Colombia variety had limits. Rust is a fungus, and fungi adapt to whatever resistance a plant throws at them, sometimes within a single generation of the pathogen. Cenicafé kept backcrossing and selecting for another 23 years, refining the plant across five total generations to push resistance further while narrowing the gap in cup quality that separated it from unmodified Caturra. The result, released in 2005, was named Castillo. Industry accounts consistently attribute the name to Jaime Castillo, a researcher connected to the breeding program, though this isn't documented in any Cenicafé publication I could find, so it's worth treating as the accepted story rather than a confirmed fact.

Castillo was never released as a single, uniform plant. Cenicafé put out six regional selections, each tuned to a different growing zone: El Rosario, Naranjal, Paraguaicito, La Trinidad, Pueblo Bello, and Santa Bárbara. That's a deliberate strategy, not an oversight. Planting one genetic line across an entire country creates a single point of failure. If rust eventually mutates around one selection's resistance, a diversified set of regional lines means only part of the national crop is exposed, not all of it at once. It's the same logic that keeps a diversified investment portfolio from collapsing when one asset does.

Where Castillo Grows Today

Castillo is now the most widely planted variety in Colombia, accounting for roughly 40 to 45 percent of the national crop according to Cenicafé. Its share grew fastest after a national renovation campaign beginning around 2008 replaced an estimated 3 billion aging or rust-vulnerable trees with Castillo stock, a program run in close coordination with the FNC's extension network reaching individual smallholder farms.

The variety grows well across a wide altitude band, from around 1,200 up to 2,000 metres and higher, covering most of Colombia's core producing departments. Huila and Tolima carry particularly heavy Castillo plantings, alongside the traditional Eje Cafetero departments of Caldas, Quindío, and Risaralda. Like Caturra, Castillo keeps a compact, short stature, which lets farmers plant it more densely than taller varieties such as Typica or Bourbon and makes handpicking easier on Colombia's steep hillside terrain.

Unlike Caturra or Bourbon, which spread across Central America, Brazil, and beyond, Castillo remains almost entirely a Colombian variety. It was bred specifically for Colombian growing conditions and the particular rust strains present there, so it hasn't seen the same international adoption as older, more widely traveled cultivars.

Does Castillo Taste as Good as Caturra?

Castillo has carried a reputation for lower cup quality almost since its release, and that reputation traces partly to its ancestry. Because the Timor Hybrid is part Robusta, some buyers and roasters assumed that trait would carry through into a harsher, less refined cup, even though Castillo sits many breeding generations removed from that original cross.

The evidence doesn't support the gap as strongly as the reputation suggests. A sensory trial run in 2014 and 2015 compared Castillo and Caturra grown on the same farms and processed under identical conditions, and found comparable scores between the two, with some Castillo lots reaching above 90 points on a 100-point cupping scale. Separately, blind cupping work carried out through Catholic Relief Services' Borderlands project reached a similar conclusion: no significant difference in average scores between the two varieties. In both cases, researchers pointed to soil fertility, shade management, and processing quality as far stronger predictors of what ends up in the cup than the variety label on the bag.

That said, perception hasn't fully caught up with the research. Castillo still trades at a discount to Caturra in some specialty circles, less because of what it actually tastes like and more because of what buyers assume it will taste like before they've cupped it blind.

What Castillo Coffee Tastes Like

Well-grown, well-processed Castillo produces a smooth, balanced cup with citric acidity and a medium body. Depending on growing altitude and processing method, tasters commonly find notes of caramel, chocolate, or stone fruit, with washed process lots tending toward a cleaner, brighter profile and natural process or honey-processed lots picking up more fruit-forward sweetness.

Castillo doesn't demand a particular roast level the way some more delicate, aromatic varieties do. It holds up reasonably well from light to medium roasts, and its balanced acidity and body make it a practical choice for both filter and espresso use, one reason it shows up so often as a base for everyday specialty offerings rather than as a single, spotlighted micro-lot. That practicality is exactly what Cenicafé was breeding for: a coffee that a smallholder farm could grow reliably and a roaster could work with confidently, rather than one built to chase the highest possible cupping score at the expense of everything else. The Castillo we currently carry makes that same point from a different angle: it's a co-fermented lot from Los Patios in Huila, and the variety's reliability is exactly what lets a producer experiment with fermentation on top of it without the cup falling apart.

Castillo 2.0 and What Comes Next

Rust resistance isn't permanent. Researchers involved with the original breeding program have estimated Castillo's resistance could hold for roughly 15 years from its 2005 release before rust populations adapt enough to erode it meaningfully, which puts real pressure on Cenicafé to keep breeding ahead of the disease rather than resting on Castillo's success so far.

That work is already underway. Reporting on a further release, sometimes referred to as Castillo 2.0, points to continued breeding aimed at improving productivity and resilience beyond the original 2005 lines. Details on its exact genetic makeup and rollout are still thin in publicly available sources, so it's worth treating as a variety to watch rather than one with an established track record yet.

What's clear is that Castillo was never meant to be a final answer, only the most recent one in a breeding program that started in 1968 and has no obvious reason to stop. For the smallholder families whose livelihoods depend on a healthy harvest every year, that ongoing work matters more than any single auction price or cupping score. It's the reason Colombian coffee has kept arriving in cups around the world largely uninterrupted, even as the fungus it was bred to outrun keeps adapting in the background.
