Let your coffee rest

The coffee should rest for minimum 21 days after roasting and be used within 4 months at the latest. The coffee reaches its maximum complexity within a certain period of time. In our experience we found that between 4-8 weeks the coffees are reaching their peak.

What is Omniroast?

Omnirost (or "omni-roast") is a roasting approach where coffee beans are roasted to a versatile light-medium level that works well across multiple brewing methods. Rather than optimizing for a single preparation style, omnirost aims to deliver balanced flavor that shines whether the coffee is brewed as espresso, pour-over, French press, or other methods.

About the producer / farm

Über den Produzenten / die Farm

Nyeri Hill Estate AB

Nyeri Hill Estate lies in Nyeri County on the slopes of Mount Kenya, one of the oldest coffee farms in East Africa, first planted in 1914. The estate is run by the Catholic Archdiocese of Nyeri and spans over 1,400 hectares, with around 340 devoted to coffee grown between 1,800 and 2,200 meters above sea level in volcanic red soil. More than 350 permanent staff and thousands of seasonal pickers work the harvest each year. Profits from the coffee support local schools, a teachers' college, and a mission hospital, making the estate as much a community institution as a coffee farm.

About the varietal

Über die Sorte

SL14, SL28, Batian, Ruiru 11

SL14, SL28, Batian, and Ruiru 11 are all Kenyan-developed varieties grown together at Nyeri Hill Estate. SL14 and SL28 date to the 1930s work of Scott Laboratories, prized for their vivid acidity and blackcurrant character, though both remain vulnerable to leaf rust and coffee berry disease. Batian and Ruiru 11 were bred later by Kenya's Coffee Research Institute to resist those same diseases while approaching the cup quality of the SL series. Grown side by side, the four varieties combine to give the lot Kenya's signature juicy acidity, blackcurrant intensity, and layered complexity.

About the process

Über die Aufbereitung

Washed

The washed process begins with selective picking of ripe cherries, which are then depulped to remove the outer skin. The beans ferment in water or dry for a controlled period to break down the remaining mucilage before being thoroughly washed and moved to drying beds. Drying typically takes one to two weeks, depending on conditions, with the beans turned regularly to ensure even moisture loss. The result is a clean, transparent cup where the character of the bean and the skill of the producer come through without interference from the fruit.

Omniroast

About the roast

Omniroast

Most coffees are roasted with a single brewing method in mind — lighter for filter, darker for espresso. An Omniroast throws out that rulebook.

Each of our Omniroast coffees is developed to a single, carefully crafted profile that lets the coffee shine however you choose to brew it — whether that's a morning pour-over, a pulled espresso shot, or anything in between. The goal is balance: enough brightness and complexity to sing in a filter brew, enough body and sweetness to hold up as an espresso.

It's all about the coffee

At Sandbox, we embrace innovation and challenge the status quo. That’s why we don’t differentiate between espresso and filter roasts, and we use only light roasts to bring out the best in our coffee. We encourage you to explore and experiment with our coffees—whether you prefer filter, espresso, or flat white, make it your own. Be curious, enjoy the journey and let’s learn from each other!
