This washed Java from Marcial Huanca at Finca Palmar in Caranavi, Bolivia, was depulped, fermented, and carefully dried to let the variety speak clearly.

Honey sweetness opens the nose, followed by delicate white and yellow florals that drift through the cup with a soft, clean texture. Acidity is very low — the finish is gentle and round.

Marcial Huanca | Finca Palmar

Marcial Huanca is a small-scale producer based in the community of 25 de Abril in the Caranavi growing region of Bolivia, and a member of Cooperative Mejillones. He is also a certified Q-grader and has judged at Cup of Excellence and Cup of Fair Trade competitions previously held in Bolivia, bringing a technical depth to his farming that goes well beyond the average smallholder. His focus on quality and his direct involvement in the specialty market have made Finca Palmar a reliable source of clean, expressive lots from one of South America's most promising coffee regions.

Java

Java is an Ethiopian landrace selection that travelled via Indonesia and Cameroon before reaching Central America, where it is now widely cultivated in specialty. Genetically, it is classified as an Ethiopian landrace type rather than a true Typica, despite early reports. The variety produces elongated, bronze-tipped beans and is prized for its disease tolerance and low input requirements. In the cup, Java delivers a refined, soft sweetness with delicate floral accents and a clean, gentle acidity — a quiet but well-defined profile that rewards careful washed processing.

Washed

The washed process begins with selective picking of ripe cherries, which are then depulped to remove the outer skin. The beans ferment in water or dry for a controlled period to break down the remaining mucilage before being thoroughly washed and moved to drying beds. Drying typically takes one to two weeks, depending on conditions, with the beans turned regularly to ensure even moisture loss. The result is a clean, transparent cup where the character of the bean and the skill of the producer come through without interference from the fruit.

Most coffees are roasted with a single brewing method in mind — lighter for filter, darker for espresso. An Omniroast throws out that rulebook.

Each of our Omniroast coffees is developed to a single, carefully crafted profile that lets the coffee shine however you choose to brew it — whether that's a morning pour-over, a pulled espresso shot, or anything in between. The goal is balance: enough brightness and complexity to sing in a filter brew, enough body and sweetness to hold up as an espresso.
