Let your coffee rest

The coffee should rest for minimum 21 days after roasting and be used within 4 months at the latest. The coffee reaches its maximum complexity within a certain period of time. In our experience we found that between 4-8 weeks the coffees are reaching their peak.

What is Omniroast?

Omnirost (or "omni-roast") is a roasting approach where coffee beans are roasted to a versatile light-medium level that works well across multiple brewing methods. Rather than optimizing for a single preparation style, omnirost aims to deliver balanced flavor that shines whether the coffee is brewed as espresso, pour-over, French press, or other methods.

is a unique coffee varietal known for its distinct flavor profile and vibrant quality. A hybrid originated from Ethiopia, it thrives at high altitudes in Colombia and other coffee-growing regions. Its cherries develop a pink hue when ripe, attributed to specific genetic and environmental conditions. Pink Bourbon is prized for its complex taste, often featuring floral, citrus, and tropical fruit notes with a bright acidity and creamy body. Due to its challenging cultivation and lower yield, it is considered rare and highly sought after by specialty coffee enthusiasts.

Washed Process

The washed coffee process, also known as the wet process, involves removing the coffee cherries' outer skin and pulp before the beans are dried. First, the cherries are harvested and sorted to remove any unripe or defective ones. Then, they are pulped, separating the beans from the fruit. The beans are fermented in water for 12 to 48 hours to break down the mucilage, a sticky layer surrounding them. After fermentation, the beans are thoroughly washed to remove any remaining residue. Finally, the clean beans are dried, either in the sun or using mechanical dryers, before being hulled, sorted, and prepared for export. This method produces a cleaner, brighter flavor in the final coffee.

Most coffees are roasted with a single brewing method in mind — lighter for filter, darker for espresso. An Omniroast throws out that rulebook.

Each of our Omniroast coffees is developed to a single, carefully crafted profile that lets the coffee shine however you choose to brew it — whether that's a morning pour-over, a pulled espresso shot, or anything in between. The goal is balance: enough brightness and complexity to sing in a filter brew, enough body and sweetness to hold up as an espresso.
