# Castillo Coffee

Castillo is Colombia's rust-resistant workhorse, bred by Cenicafé to keep smallholder farms producing through leaf rust outbreaks that once devastated other origins. Released in 2005, it's now the country's most widely planted variety, delivering a smooth, citric cup with caramel, chocolate, or stone fruit depending on how it's grown and processed.
